Can someone check what is an indication of the engine temperature on a display of the speedometer during normal stable ride ? I have 78 C, isn't it to low ?

No, That's pretty much spot on Cruising in the motorway at a steady 70-80 mph mine always sits within a degree or two of that. On track and a hot day it was sitting at about 90C.
More important is that it doesn't drop below that. If it does it could mean your thermostat has stuck in the fully open position. Also, in slow traffic, when the temp hits 104 the fans must come on and bring the temp back down to about 94-96C.

I'm looking for what causes the engine stop at idle after warming and I thought that this could be the reason. It's very frustrating.
